Black Bean Salad With Cumin Vinaigrette - cooking recipe

Ingredients
    2 cans black beans, drained
    1 Tbsp. red wine vinegar
    1 tsp. ground cumin
    1 Tbsp. chopped cilantro
    1/2 red pepper, diced
    1/2 green pepper, diced
    4 scallions, thinly sliced
    1 tsp. salt
    1 clove garlic, minced
    1 tsp. hot pepper sauce
    1/2 c. no oil Italian dressing
    1/2 yellow pepper, diced
    1 red onion, diced
    cilantro for garnish
Preparation
    Place beans in large mixing bowl.
    Add peppers, red onion and scallions.
    In a small bowl, combine remaining ingredients, except cilantro garnish.
    Mix well to combine.
    Pour over bean mixture. Toss well to combine.
    Serve at room temperature.
    Garnish with cilantro.
    Makes 4 servings.
