Barley Salad(Low-Fat Recipe) - cooking recipe

Ingredients
    3/4 c. medium pearl barley
    4 c. water
    3/4 tsp. salt, divided
    2 medium tomatoes, seeded and chopped
    1/2 c. sliced green onions
    1/2 c. chopped parsley
    1/2 lb. Feta cheese, crumbled
    2 Tbsp. chopped fresh mint (1 tsp. dried)
    1/4 c. lemon juice
    2 Tbsp. olive oil
    1 clove garlic, minced
    1/8 tsp. pepper
Preparation
    Bring water to a boil.
    Stir in barley and 1/4 teaspoon salt. Reduce heat and cover.
    Simmer 50 to 60 minutes or until tender. Drain and cool.
    Transfer to large bowl.
    Add tomatoes, green onions, parsley, cheese and mint.
    Combine lemon juice, oil, garlic, remaining 1/2 teaspoon salt and pepper.
    Pour over barley mixture; toss.
    Cover and chill at least 2 hours.
    Great served with tortilla chips as an appetizer.
