Fiesta Cornbread - cooking recipe

Ingredients
    1/3 c. melted shortening
    1 c. self-rising cornmeal
    2 eggs, beaten
    1 tsp. salt
    3/4 c. sour cream
    1 small onion, chopped
    4 or 5 finely chopped jalapeno peppers
Preparation
    Preheat oven to 400\u00b0.
    Pour shortening into 10-inch iron skillet and place in oven to heat.
    Combine remaining ingredients, mixing well.
    Pour all but 2 tablespoons of heated shortening into cornmeal mixture; mix well.
    Pour batter into hot skillet and bake for 35 minutes or until golden brown.
