Chicken Manicotti - cooking recipe

Ingredients
    2 c. chicken, cooked and shredded
    1 small onion, chopped
    1 c. Ricotta cheese
    2 Tbsp. parsley
    2 tsp. garlic, minced
    1 (15 oz.) box manicotti pasta (or large pasta shells)
    1 (15 oz.) jar spaghetti sauce
    2 c. Mozzarella cheese, grated
    Parmesan cheese to taste
    1 tsp. olive oil
Preparation
    Cook
    manicotti according to package directions.
    Saute onion and
    garlic
    in
    olive
    oil.
    In
    a large bowl, combine chicken, onion,
    garlic,
    Ricotta
    cheese,
    parsley and 1 cup Mozzarella cheese.
    Mix thoroughly (you may even want to blend in
    a
    food processor).
    Stuff chicken mixture into manicotti pasta using a small spoon.
    Place in a 13 x 9-inch baking dish and pour spaghetti sauce over the manicotti.
    Top with remaining Mozzarella and Parmesan cheese.
    Cover with foil and bake at 350\u00b0 for
    40
    minutes.
    Remove foil and bake 10 minutes to slightly brown top.
