Oatmeal Cream Cheese Muffins - cooking recipe

Ingredients
    1 c. quick cooking oatmeal
    1 c. milk
    1/2 c. brown sugar
    1/4 c. oil
    1 egg, beaten
    1 1/2 c. all-purpose flour
    1 1/2 tsp. baking powder
    1/4 tsp. salt
    3 oz. cream cheese
    2 Tbsp. oats
    2 Tbsp. brown sugar
Preparation
    Place oats and milk in bowl and let stand for 30 minutes.
    Stir in brown sugar, oil and egg into soaked oats.
    Combine flour, baking powder and salt.
    Stir into oat mixture just until blended. Do not overmix.
    Spoon half the batter into greased muffin tins. Place about a teaspoon of cream cheese into center of batter.
    Top with remaining batter.
    Combine oats and brown sugar for topping. Sprinkle on top.
    Bake at 350\u00b0 for about 20 minutes.
