Mother'S Pimento Rice - cooking recipe

Ingredients
    1/2 c. diced onions
    1/2 c. diced green pepper
    2 Tbsp. butter
    1 1/2 c. uncooked rice
    1 1/2 tsp. salt
    1/4 tsp. pepper
    3 c. water
    1/2 c. chopped pimentos
Preparation
    Cook onions and green pepper in butter until tender.
    Add rice, seasonings and water; heat to boiling.
    Stir once, cover and reduce heat.
    Cook 15 minutes or until liquid is absorbed.
    Add pimentos; fluff lightly with fork.
    Makes 6 servings.
    Serve with your favorite meat dish.
