Beef Au Jus(My Favorite Party Dish) - cooking recipe

Ingredients
    1 large roast for a crowd or 1 small rolled roast (sirloin tip preferred)
    1 stalk celery, diced
    1 medium onion, chopped
    1 tsp. garlic salt
    1 bay leaf
    2 Tbsp. soy sauce
    2 medium green peppers, parboiled
    salt and pepper to taste
Preparation
    One or even 2 days ahead, cover roast with water and bring to a boil.
    Add all remaining ingredients, except green peppers; simmer for 3 hours.
    Cool overnight for best results to slice; layer meat in shallow pan. Pour juice over meat.
    Add more garlic salt and soy sauce.
