Doris Fatjo'S Pralines - cooking recipe

Ingredients
    2 1/2 c. sugar
    1 c. heavy cream
    1/2 c. sugar
    1 tsp. vanilla
    2 c. coarsely chopped pecans
Preparation
    Mix 2 1/2 cups sugar with 1 cup cream in heavy saucepan and bring to a boil, stirring constantly.
    Brown 1/2 cup sugar until caramelized.
    Combine the 2 mixtures.
    After blending the two, stop stirring and continue to boil until a small amount dropped in cold water forms a perfect ball.
    Remove from heat and add 1 teaspoon of vanilla and 2 cups pecans.
    Beat until mixture loses its gloss, then drop by rounded teaspoons on waxed paper to make pralines.
