Southwestern Corn Muffins - cooking recipe
Ingredients

1 c. corn meal
1/3 c. honey
3/4 c. whole wheat flour
3/4 tsp. baking soda
1 tsp. cream of tartar
3 egg whites (unbeaten)
1 1/8 c. low-fat buttermilk
1 (4 oz.) can diced green chiles, drained
1/2 c. frozen corn kernels, defrosted
1/4 c. diced red peppers, steamed
Preparation

Preheat oven to 425\u00b0.
In large mixing bowl, combine corn meal, flour, baking soda and cream of tartar.
Set aside.
In medium bowl, stir together egg whites, buttermilk, honey, green chiles, corn and red peppers.
Stir into corn meal mixture and mix until just blended.
