Fruity Cheese Cupcakes - cooking recipe

Ingredients
    2 large pkg. cream cheese, at room temperature
    2 eggs
    3/4 c. sugar
    1 tsp. vanilla
    1 Tbsp. lemon juice
    1 box vanilla wafers
    1 can cherry pie filling
    1 can blueberry pie filling
    1 can strawberry pie filling
Preparation
    Put cupcake papers in cupcake pans.
    Place one vanilla wafer in each paper, round side down.
    Beat eggs until fluffy; add cream cheese, sugar, vanilla and lemon juice.
    Mix very well.
    Fill cupcake papers a little more than full with mixture.
    Bake at 325\u00b0 for 25 minutes.
    Cool completely.
    Place 1 tablespoon of cherry pie filling in the middle of each cupcake.
    \"You may also use blueberry or strawberry pie filling.\"
    Yields 20 to 24 tarts.
