Garlic And Tomato Risotto(A Vegetarian Delight) - cooking recipe

Ingredients
    1 medium onion, diced
    1 red bell pepper, diced
    3 Tbsp. minced garlic
    1 Tbsp. chopped sun dried tomatoes
    1 c. chopped and drained fresh or canned tomatoes
    2 c. chopped spinach
    2 c. arborio rice
    3 to 5 c. hot vegetable broth
    1 Tbsp. grated Parmesan cheese
    pepper to taste
Preparation
    Coat saucepan with cooking spray.
    Warm over medium-high heat. Add onion.
    Saute until soft but not browned.
    Add 1/4 cup of broth if needed to prevent onion from browning.
    Add pepper, garlic, tomatoes and spinach.
    Saute, stirring for about 5 minutes.
