Rabbit - cooking recipe

Ingredients
    2 large rabbits
    1 carrot, sliced
    2 shallots, chopped
    4 Tbsp. mixed herbs
    1 c. dry white wine
    vodka or gin warmed (optional)
    2 wide strips pork fat
    2 mandarins, sliced, peel and fruit
    2 bay leaves
    2 Tbsp. minced chives
    1 c. mandarin juice
Preparation
    Wrap rabbit in strips of pork fat and put in roasting pan with carrot, mandarin slices, chopped shallots, herbs and white wine. Roast in 350\u00b0 oven for 1 1/2 hours.
    After cooking 30 minutes, add mandarin juice.
    Remove rabbit, discard pork fat, strain sauce, pour over rabbit.
    Flame with vodka or gin.
    Serves 6 to 8.
