Pinto Beans And Rice - cooking recipe

Ingredients
    1 lb. pinto beans, soaked overnight, drained and put in large kettle
    1/2 lb. ham hock or smoked ham
    1 large onion, chopped
    3 stalks celery, chopped
    1 Tbsp. parsley, chopped
    1/2 green pepper, chopped
    2 bay leaves
    2 large cloves garlic, crushed
Preparation
    Add water to cover.
    Bring to a boil.
    Simmer, uncovered, 2 hours; add more water if necessary.
    After 2 hours, add 1/2 stick margarine and pepper to taste.
    Cover; cook another hour on low heat.
    Serve over white rice.
