Ingredients

12 small beets
1/2 c. sugar
1/2 Tbsp. cornstarch
1/2 c. vinegar
2 Tbsp. butter
Preparation

Wash beets; cook in boiling water until soft.
Remove skins and cut beets in thin slices, small cubes or fancy shapes.
Mix 1/2 cup sugar, 1/2 cup vinegar and 2 tablespoons cornstarch together and let boil five minutes.
Pour over beets and let stand on back of range 1/2 hour.
Just before serving, add 2 tablespoons butter.
