Fried Eggplant And Onions With Cheese Sauce - cooking recipe

Ingredients
    2 Tbsp. butter
    1/4 c. flour
    1 c. evaporated milk
    1 c. water
    1/4 tsp. salt
    1/4 lb. sharp cheese, diced
    1 medium eggplant
    2 small onions
    6 Tbsp. butter
    salt to taste
Preparation
    Melt 2 tablespoons butter, blend in flour and add liquids, stirring constantly while heating until sauce thickens.
    Add 1/2 teaspoon salt and cheese.
    Stir until cheese melts.
    Cover and keep hot over boiling water while preparing eggplant and onion.
