Red Beet Eggs - cooking recipe

Ingredients
    16 oz. can beets
    3/4 c. sugar
    1 Tbsp. mixed pickling spices
    1 c. vinegar
    1 Tbsp. salt
    6 hard-cooked eggs
    1 medium onion, thinly sliced and separated in rings
Preparation
    Drain beets, reserving liquid into glass bowl or jar.
    Add vinegar, sugar, salt and spices.
    Stir until sugar dissolves.
    Add beets, eggs and onions.
    Cover.
    Chill 2 hours or longer before serving.
    Drain eggs and serve in one dish, onions and beets in another.
    Yield:
    6 servings.
