Potato Pancakes - cooking recipe

Ingredients
    4 large potatoes, pared
    1/4 c. grated onion
    2 eggs, slightly beaten
    2 Tbsp. flour
    3/4 tsp. salt
    dash of nutmeg
    dash of pepper
    salad oil (for frying)
Preparation
    Grate potatoes into colander.
    Squeeze out juice and drain.
    In large bowl, combine all ingredients, except oil.
    Mix well.
    Heat oil in frypan, 1/8-inch or so (pan hot, not smoking).
    Drop 2 tablespoons ingredients in hot fat, flatten and fry 2 to 3 minutes on each side until golden brown.
    Drain well on plate with paper towel.
    Transfer to ovenproof pan and keep warm in 300\u00b0 oven until served.
