Golden Potato Bake - cooking recipe

Ingredients
    2 lb. potatoes, peeled (about 6 medium)
    1 (16 oz.) can diced carrots, drained, or 2 c. diced carrots, cooked and drained
    hot milk
    2 Tbsp. butter
    salt to taste
Preparation
    Preheat oven to 350\u00b0.
    Cook potatoes in boiling salted water until tender; drain.
    Add carrots.
    Mash at low speed with electric mixer.
    Slowly beat in enough milk to make light and fluffy.
    Stir in the butter and a little salt and pepper.
    Put into a greased 2-quart casserole; dot with butter, if desired. Bake for 25 minutes.
    Makes 8 servings.
