Zucchini Casserole - cooking recipe
Ingredients

1 1/2 lb. seasoned pork sausage
1 large onion, chopped
1 large green pepper
2 stalks celery
1 medium zucchini, sliced
1 large can mushrooms, drained
1 Tbsp. oleo
2 1/2 c. Minute rice
2 Tbsp. Italian seasoning
1/2 tsp. garlic powder
3 eggs
3 to 4 Tbsp. Parmesan cheese
1 tsp. salt and pepper
1 chopped tomato
nacho chips
1/2 c. grated Mozzarella cheese
Preparation

Brown sausage.
Drain fat and set aside.
Saute vegetables in oleo; set aside.
Prepare Minute rice according to package directions.
Add Italian seasoning and garlic powder to rice. Mix eggs together with Parmesan, salt and pepper. Combine sausage, zucchini, rice and egg mixture with tomato.
Crush nacho chips and place in bottom of two 9-inch pie dishes.
Divide mixture between dishes over chips.
Sprinkle 1/2 cup grated Mozzarella cheese over each dish.
Bake for 20 to 30 minutes at 350\u00b0.
