Low Country Chicken Bogg - cooking recipe

Ingredients
    4 large chicken leg quarters (Tyson)
    1 1/2 lb. kielbasa Polska sausage (light)
    1/2 lb. country ham, chopped
    3 c. chopped Vidalia onions
    3 c. Uncle Ben's rice
    3 1/2 level tsp. black pepper
Preparation
    Cook chicken, sausage and ham in 8 cups of water until the chicken is done.
    Debone chicken removing all skin and fat.
    Add onions, rice and pepper and cook on low until rice is done, approximately 1 hour.
    Add water, if needed, and salt if desired. Remove from heat and let sit for at least 1 hour.
    Makes 5 quarts.
