Cincinnati Chili - cooking recipe

Ingredients
    3 c. water
    1 (7 oz.) can tomato paste
    1 c. finely chopped celery
    2 Tbsp. chili powder
    1 Tbsp. sugar
    2 bay leaves
    2 tsp. cinnamon powder
    1 tsp. salt
    1/2 tsp. cumin
    1/4 tsp. ground cloves
    1 (29 oz.) can tomato sauce
    2 c. finely chopped onions
    1 Tbsp. lemon juice
    1 Tbsp. cocoa powder
    2 cloves garlic, finely minced
    1 tsp. pepper
    1/2 tsp. ground allspice
    2 lb. ground turkey *
Preparation
    In a nonreactive kettle (stainless steel), combine all ingredients, except meat.
    Cover and bring to a boil.
    Reduce heat to simmer and crumble in meat.
    Simmer, uncovered, for 1 to 2 hours, until chili is as thick as you like it.
    Discard bay leaves and serve.
