Ingredients

3 medium cucumbers
2/3 c. white vinegar
1/3 c. chopped fresh mint
1 Tbsp. sugar
1/4 tsp. pepper
Preparation

Peel cucumbers and cut lengthwise into quarters, then crosswise into 1/4-inch thick slices.
Place in bowl with 1/2 cup water and remaining ingredients.
Toss with fork to mix.
Cover and refrigerate.
Serve with hot or cold meat, fish or poultry.
