Jalapeo Cornbread - cooking recipe

1 c. self-rising cornmeal
2 eggs
3 Tbsp. sour cream
1 (8 3/4 oz.) can cream-style corn
2 Tbsp. chopped pickled jalapeo peppers
1 1/2 tsp. vegetable oil
Preparation

Heat an 8-inch cast-iron skillet in a 400\u00b0 oven for 5 minutes. Combine first 3 ingredients in a large bowl; make a well in center of mixture. Set aside. Combine eggs and next 4 ingredients; add to dry ingredients, stirring until moistened. Remove skillet from oven and coat with cooking spray; pour batter into hot skillet. Bake at 400\u00b0 for 20 minutes or until golden brown. Yield: 8 servings.
