Enchilada Casserole(Beef And Plenty Of Cheese) - cooking recipe

Ingredients
    3 lb. ground beef
    1 c. chopped onion
    2 pkg. enchilada seasoning
    1 (4 oz.) can chopped olives
    1 (17 oz.) can whole kernel corn, undrained
    1 (16 oz.) can pinto beans, undrained
    2 lb. shredded Cheddar cheese and Monterey Jack, mixed
    1 (32 oz.) can enchilada sauce
    1/3 c. water
    24 (6-inch) corn tortillas
    salt and pepper to taste
    cooking oil
Preparation
    In large skillet, cook ground beef and onion until meat is no longer pink.
    Drain off fat.
    Add seasoning packages, corn, pinto beans, olives and water.
    Simmer, uncovered, for 15 minutes, stirring frequently.
