Sausage Stuffed Mushrooms - cooking recipe

18 medium size fresh mushrooms
fresh lemon juice
2/3 lb. sweet Italian sausage
salt and pepper
2 Tbsp. butter
chopped parsley
Preparation

Remove the stems from the mushrooms; chop them very fine. Coat the caps with lemon juice.
Remove the sausage meat from the casings; place it in a large bowl.
Mix in the diced mushroom stems and a small amount of salt and pepper.
Blend thoroughly, using a light touch.
Preheat oven to 375\u00b0.
Spoon the sausage mixture into the mushroom caps, smoothing the tops into a rounded shape.
Butter a baking dish; set the mushrooms in it, sausage side up.
Bake about 15 minutes, or until the sausage meat is cooked through.
Serve hot, garnished with chopped parsley.
