Fruit, Nut And Rice Casserole - cooking recipe

Ingredients
    2 c. dried apricots
    1 c. white raisins
    2 c. rice
    1/2 c. butter
    1 c. minced onion
    1/2 c. chopped green peppers
    1/2 tsp. curry powder
    1 c. toasted almonds
Preparation
    Cover apricots and raisins with water and soak for 1/2 hour. Boil rice according to package directions.
    Preheat oven to 375 degrees.
    In a skillet, melt butter and saute onion, green peppers, curry powder.
    Add in almonds and the drained, chopped apricots and raisins and the cooked rice.
    CORRECT THE SEASONING and put into a greased baking dish to bake for about 30 minutes.
