Roly-Poly Carrot Marbles - cooking recipe

Ingredients
    3 oz. soft cream cheese
    1 c. shredded Cheddar cheese
    1 tsp. honey
    1 c. finely shredded carrots
    3/4 c. finely chopped dry roasted peanuts
Preparation
    Mix cream cheese, Cheddar cheese and honey.
    Mix in carrots and chill for 1 hour.
    Shape in balls, using 1 1/2 teaspoons for each ball.
    Roll in chopped nuts and chill until firm.
