Pampered Chicken - cooking recipe

Ingredients
    4 boneless, skinless chicken breasts (about 1 1/4 lb.)
    salt and white pepper
    1 Tbsp. butter
    3 Tbsp. finely chopped shallots
    1 tsp. finely chopped garlic
    4 plum tomatoes, cut into small cubes
    2 Tbsp. red wine vinegar
    1 Tbsp. tomato paste
    4 Tbsp. chopped fresh parsley leaves
    1 Tbsp. olive oil
    1 tsp. dried tarragon
    1/2 c. dry wine
    4 Tbsp. drained capers
Preparation
    Sprinkle the chicken with salt and pepper.
    Heat the oil and butter in a heavy skillet.
    Add the chicken breasts and saute over medium-high heat until lightly browned, about 5 minutes.
    Add the shallots and garlic around the chicken and cook briefly.
    Add the tarragon, tomatoes, vinegar, capers, wine and tomato paste. Stir and blend well; bring to a boil, cover and simmer for 5 minutes.
    Sprinkle with parsley and serve.
    Yield:
    4 servings.
