Spinach Chicken Quiche - cooking recipe
Ingredients

1 medium leek
water
1/4 c. butter or margarine
2 c. chopped, cooked chicken
1/2 (10 oz.) pkg. frozen, chopped spinach or broccoli, cooked and drained
1 (10-inch) pie crust
1 Tbsp. flour
1 1/2 c. shredded Swiss cheese
4 eggs
1 1/2 c. half and half or evaporated milk
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground nutmeg
Preparation

Cut leek in half lengthwise, wash and trim, leaving green tops intact.
Cut crosswise into thin slices.
Place leek in small saucepan.
Add enough water to cover.
Cook until boiling; reduce heat.
Simmer 5 minutes.
Drain.
