Eggplant-Crab Meat Casserole - cooking recipe
Ingredients

1 large eggplant, diced
1 large onion, minced
1 1/2 c. bread crumbs
1 1/2 c. grated cheese
1 tsp. salt
1 tsp. pepper
2 Tbsp. butter
1 c. crab meat
2 eggs, beaten
Preparation

Boil eggplant in water to cover for about 20 minutes.
Drain and mash.
In large mixing bowl, combine eggplant with minced onion, one cup bread crumbs, one cup cheese, salt, pepper and butter; mix thoroughly.
Add crab meat and beaten eggs.
