Banana Scotch Muffins - cooking recipe
Ingredients

1 ripe banana, peeled
1 egg, beaten
1/2 c. sugar
1/4 c. milk
1/4 c. oil
1 tsp. vanilla
1 c. flour
1 c. quick oats
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. butterscotch chips
Preparation

Puree banana in blender.
In medium bowl, combine banana, egg, sugar, milk, oil and vanilla.
In large bowl, combine flour, oats, baking powder, baking soda and salt.
Stir banana mixture into dry ingredients with butterscotch chips until just blended.
Spoon into well-greased 2 1/2-inch muffin cups.
Bake in 400\u00b0 oven 12 to 15 minutes.
Remove from pan.
Makes 12 muffins.
