Cheesy Vegetable Saute - cooking recipe

Ingredients
    1 c. green pepper strips
    1 c. red onion, cut into rings
    1 garlic clove, minced or 1 tsp. garlic
    1/2 tsp. dried basil leaves
    3 to 4 Tbsp. margarine
    2 medium tomatoes, peeled and wedged
    3 oz. shredded Mozzarella cheese (3/4 c.)
Preparation
    Melt margarine in large skillet.
    Saute peppers, onion, garlic and basil until crisp-tender.
    Stir in tomatoes.
    Place on ovenproof serving platter.
    Sprinkle cheese on top.
    Broil until cheese is melted.
    Serve immediately.
    Serves 4.
