Vegetable Sandwich Spread - cooking recipe
Ingredients

1 small onion
2 carrots
1 green pepper
2 medium cucumbers
3 Tbsp. juice from grated vegetables
1 pkg. unflavored gelatin
salt and sugar (to taste)
1 c. mayonnaise
Preparation

Peel carrots, onions and cucumbers.
Remove seed from cucumbers and green peppers.
Grate all vegetables finely or chop in food processor.
Squeeze juice from vegetables, reserving 3 tablespoons juice.
Put 3 tablespoons juice in small saucepan and sprinkle gelatin over juice.
Heat slowly until gelatin is dissolved.
Pour over vegetables, adding salt, sugar and mayonnaise.
Refrigerate until set.
Stir when ready to spread on bread or crackers.
(If too stiff, add more mayonnaise.)
