Lemon Meringue Pie - cooking recipe

pastry for single crust 9-inch pie
1 c. sugar
6 Tbsp. cornstarch
1/8 tsp. salt
1 1/2 c. cold water
3 egg yolks, beaten
2 Tbsp. butter
1/2 c. lemon juice
1 tsp. white vinegar
1 tsp. grated lemon peel
Preparation

Line a 9-inch pie plate with pastry; bake and cool.
Combine sugar, cornstarch and salt in a heavy saucepan.
Gradually stir in water, blending until smooth.
Cook over medium heat, stirring constantly, until filling comes to a boil.
Cook for 5 minutes. Remove from heat and stir small amount of filling into beaten egg yolks, mixing thoroughly.
Cook 1 minute; remove from heat and stir in butter, lemon juice, vinegar and lemon peel.
Cool.
Add meringue.
Bake at 350\u00b0 for 15 to 18 minutes.
