Roasted Potato Salad - cooking recipe

Ingredients
    4 c. quartered, unpeeled, small, red potatoes
    1 c. mayonnaise
    2 hard-cooked eggs
    1/4 c. sliced green onions
    1/4 tsp. salt
    1/4 tsp. pepper
    4 slices bacon, chopped and crisply cooked
Preparation
    Heat oven to 425\u00b0.
    Place potatoes on a baking dish, which has been sprayed with non-stick cooking spray.
    Bake 30 to 35 minutes or until potatoes are tender and golden brown.
    Mix dressing, bacon, eggs, onions, salt and pepper in a large bowl.
    Add potatoes and mix lightly.
    Serve warm or chilled.
    Makes 6 servings; sometimes I double the recipe.
