Perfection Salad - cooking recipe

Ingredients
    1 pkg. unflavored gelatin
    1/4 c. sugar
    1/4 tsp. salt
    1 1/4 c. cold water, divided
    1/4 c. vinegar or lemon juice
    3/4 c. finely shredded cabbage
    1 c. diced celery
    1/4 c. diced green pepper or pimento
Preparation
    Mix together gelatin, sugar and salt in a saucepan.
    Stir in 1/2 cup of cold water.
    Place over medium heat, stirring constantly, until gelatin and sugar are dissolved.
    Remove from heat; stir in remaining 3/4 cup water, vinegar or lemon juice. Chill until mixture is the consistency of unbeaten egg white.
    Fold in cabbage, celery and green pepper.
    Turn into a 6-cup mold or individual molds.
    Chill until firm.
    Unmold on salad greens; serve with mayonnaise.
    Yields six servings.
