Swedish Rice Ring - cooking recipe

Ingredients
    2 envelopes unflavored gelatin
    1/4 c. cold water
    1/2 c. uncooked long grain rice
    3 c. milk
    1/2 c. sugar
    1/2 tsp. salt
    1 c. whipping cream or lite Cool Whip
    fresh or frozen sweetened strawberries
Preparation
    Soften gelatin in water. Set aside.
    In heavy 2 quart pan, bring rice, milk, sugar and salt to a boil, stirring occasionally. Reduce heat and cover.
    Cook over low heat until rice is tender, about 20 minutes. Remove from heat.
    Add gelatin, stirring until dissolved.
    Cover.
    Chill until partially set.
