Fruity Scones - cooking recipe

3 1/4 c. all-purpose flour (unbleached is best)
4 Tbsp. sugar
2 tsp. baking soda
1 tsp. cream of tartar
1 tsp. salt
1 Tbsp. grated orange peel
6 Tbsp. butter
4 oz. raisins
1 c. milk
Preparation

Heat oven to 425\u00b0.
Lightly grease a cookie sheet.
In a large bowl, combine flour, 3 tablespoons of the sugar, baking soda, cream of tartar and the orange peel.
Mix well with a fork.
Cut the butter into the dry mixture with a fork or a pastry blender.
Mix until mixture looks like coarse crumbs.
Add the raisins.
Add milk until the mixture is just moistened enough to form a stiff dough.
Remove dough and place on a well-floured surface.
Knead lightly 10 times.
