Eggplant Casserole - cooking recipe
Ingredients

1 small eggplant, peeled and cut into bite-size pieces
2 1/2 Tbsp. butter or margarine
1/4 c. shredded cheese
1 green pepper, chopped
1 onion, chopped
3 c. cooked tomatoes
1 tsp. salt
1/8 tsp. pepper
1 c. bread crumbs
Preparation

In a skillet combine butter or margarine, green pepper and onion.
Cook until tender.
Next add tomatoes, salt, pepper and eggplant.
Cook slow for 10 minutes or until eggplant is tender. Pour the mixture into a casserole dish and sprinkle bread crumbs on top.
Bake at 350\u00b0 for 25 minutes.
During the last 10 minutes of baking put shredded cheese on top.
