Light Orange Cheesecake - cooking recipe

Ingredients
    2 envelopes unflavored gelatin
    3 strips orange rind
    1/8 tsp. salt
    3 c. (24 oz.) low calorie creamed cottage cheese
    1 1/2 c. orange juice, divided
    3/4 c. sugar, divided
    2 eggs, separated
    1 tsp. vanilla
    1/4 c. graham cracker crumbs
Preparation
    Sprinkle gelatin over 1/2 cup orange juice in container of electric blender.
    Heat remaining 1 cup orange juice to boiling and add to blender.
    Cover and process at high speed until gelatin dissolves.
    Stop blender, add orange rind, 1/2 cup sugar, salt, egg yolks, cottage cheese and vanilla.
    Cover and process until smooth.
    Pour into a large bowl; chill until mixture mounds slightly when dropped from a spoon.
    Beat egg whites until soft peaks form, gradually beat in remaining 1/4 cup sugar and beat until stiff.
    Fold into orange mixture.
    Sprinkle graham cracker crumbs over bottom of 8-inch spring-form pan; carefully spoon cheesecake filling over crumbs. Chill until firm.
    Yields 16 servings, 100 calories per serving.
