Lentil Harvest Casserole - cooking recipe
Ingredients

4 c. dried lentils
2 eggs
1 1/2 c. grated cheese (any kind)
1 c. canned fresh or frozen of any of the following vegetables: corn, carrots, broccoli, cauliflower
1 tsp. onion flakes or 1/2 c. fresh, diced onion
1 c. uncooked rice
1 tsp. salt
2 c. water
Preparation

Combine rice, 2 cups of water and salt in a saucepan.
Bring to a boil.
Reduce heat and simmer covered 15 to 18 minutes (longer for brown rice) or until all water is absorbed and rice is tender.
