Stewed Squid With Peas - cooking recipe

Ingredients
    2 3/4 lb. cleaned or frozen squid
    6 Tbsp. olive oil
    1 clove garlic
    salt and pepper
    1/2 c. dry white wine
    6 anchovy fillets, very finely chopped
    3/4 lb. tomatoes, peeled and put through a food mill
    2 c. shelled peas
    chopped parsley
Preparation
    Cut squid into strips.
    Put the oil and garlic into a pan and heat.
    When the garlic becomes golden, add the squid to the pan and season with salt and pepper.
    Add the wine and let the mixture simmer for a few minutes.
    Then add the anchovy fillets, the pureed tomatoes and enough water to cover the squid.
    Cover and cook for about 20 minutes, then add the peas.
    When the peas and squid are tender, remove the pan from the heat. Garnish with chopped parsley just before serving.
    Serves 6.
