Maque Choux(Smothered Corn) - cooking recipe

Ingredients
    8 medium ears fresh corn
    1/2 c. chopped green pepper
    1 medium tomato, cut up
    1/4 tsp. red pepper, ground
    1 medium onion, chopped (1/2 c.)
    2 Tbsp. margarine
    1/4 tsp. salt
    1/4 tsp. black pepper
Preparation
    Remove corn from cob, cutting 2/3 of the way to the cob. Scrape the cob with the dull edge of a knife.
    You should have 4 cups corn mixture. Set aside.
    In a 3-quart saucepan, over medium heat, cook onion and green pepper in margarine about 5 minutes or until vegetables are tender.
    Stir in corn, tomato, salt and red and black peppers.
    Reduce heat to low. Cover and cook 20 minutes or until corn is tender.
