Fresh Spinach Salad - cooking recipe
Ingredients

1 1/2 lb. fresh spinach, wash, drain and chop
1/4 c. onion, minced
1 c. Cheddar cheese, shredded
1/4 c. Parmesan cheese
1/4 c. chopped celery
4 hard-boiled eggs, chopped
4 to 6 slices bacon, fried and crumbled
3/4 c. Miracle Whip
1/2 tsp. salt
2 Tbsp. tarragon vinegar
Preparation

Wash, drain well and chop spinach.
Chop egg whites (reserve yolks).
Combine all ingredients, except egg yolks.
Toss together lightly.
Just before serving, sieve egg yolks and garnish top of salad.
