Ingredients
-
1 lb. ground beef, browned
1 c. cornmeal
1/2 tsp. soda
1 Tbsp. salt
1/2 c. salad oil
1 c. milk
2 eggs
1 (1 lb.) can creamed corn
1/2 lb. shredded Cheddar cheese
jalapeno peppers, chopped (if you like)
Preparation
-
Mix together cornmeal, soda, salt, salad oil, milk and eggs. Add creamed corn.
Pepper can be added to meat if desired.
Spray Pam in 9 x 13-inch pan.
Pour 1/2 the mixture into pan, then sprinkle the ground beef, peppers and cheese over the mixture. Pour remaining half of mixture over this.
Bake for about 45 minutes at 350\u00b0 until golden brown.
Serve with beans and salad. We like taco sauce over the cornbread too.
