Ingredients

4 Cornish hens, thawed
Salt and black pepper, to taste
1/2 c. melted butter or margarine
1 (10 oz.) jar orange marmalade
Preparation

Preheat oven to 350 degrees. Salt and pepper the inside of each Cornish hen. You can truss the hens or close the opening with skewers but you don't have to do either.
Place the hens on a rack in a roasting pan.
Brush generously with melted butter or margarine.
Bake for about an 1 hour brushing with butter every 15 to 20 minutes. You might need to bake them a little longer if they don't seem to be done.
Heat the marmalade in a small saucepan. When the hens are done, remove from oven and brush with the marmalade. Return to the oven for about 2 to 3 minutes to glaze.
