Tomato Quiche - cooking recipe

Ingredients
    6 good sized tomatoes, chopped
    3 Tbsp. butter
    1/2 tsp. thyme
    1 medium onion, chopped fine
    1 large or 2 small pie crusts
    1/2 lb. Swiss cheese, cubed
    3 eggs
    1/2 pt. half and half or 8 oz. cottage cheese
    Italian seasoning or oregano
Preparation
    Combine tomatoes, butter, thyme and onion in saucepan and cook over medium heat until reduced by half (10 minutes).
    Prepare pie crust(s).
    Cover bottom with Swiss cheese and pour tomato mix on top.
    Beat eggs well and add half and half or cottage cheese. Pour over tomato mixture.
    Sprinkle on Italian seasoning or oregano.
    Bake 15 minutes at 425\u00b0 and 30 to 35 minutes at 375\u00b0. Cool 10 minutes before slicing.
