Sara'S Pimiento Cheese(Clinton, North Carolina) - cooking recipe

Ingredients
    1 red pepper, quartered
    1 lb. sharp Cheddar cheese, grated
    1 Tbsp. vinegar
    2 Tbsp. sugar
    mayonnaise
Preparation
    Cut a red pepper into quarters.
    Remove and discard seeds. Place in Pyrex dish with a little water.
    Microwave uncovered at power 8 level until skin wrinkles and comes off easily.
    Turn over occasionally.
    Remove skin, chop into small pieces.
    Grate the cheese and combine with the chopped pimiento, adding vinegar, sugar and mayonnaise until spreadable.
