Ratatouille Rice - cooking recipe

Ingredients
    1 large onion, diced
    2 medium zucchini, thinly sliced
    2 Tbsp. oil
    2 cans (16 oz.) stewed tomatoes
    1/2 tsp. pepper
    1 1/2 c. Minute Rice
    1/2 c. grated Parmesan cheese
Preparation
    Cook and stir onion and zucchini in hot oil in skillet until tender.
    Add tomatoes and pepper.
    Bring to boil; reduce heat. Cover and simmer 5 minutes.
    Stir in rice and cheese; cover. Remove from heat.
    Let stand 5 minutes.
