Watermelon Rind Pickles - cooking recipe
Ingredients

3 lb. white portion melon rind (leave thin bit of red for color)
5 c. granulated sugar
2 c. cider vinegar
1 c. cold water
1 Tbsp. whole cloves
1 Tbsp. whole allspice
1 Tbsp. broken up cinnamon sticks
1 lemon, sliced
Preparation

Let cut up rind stand in salted water (to cover) overnight. (Use 2 tablespoons salt to 1 quart of water.)
Next day, drain. Cover with fresh cold water.
Cook until tender.
Drain.
